Sweet Strawberry Ice Cream


I've been on a huge ice cream kick lately. Isn't it great to eat ice cream knowing that you're eating healthy, whole foods?! Sometimes when I serve raw desserts to friends, they're in the mindset that a sweet treat means unhealthy, fattening, and too high in calories. After I go through the ingredient list they start to believe that it IS healthy. Admittedly, I like to eat dessert for dinner occasionally :)


After many batches of my favourite flavor, vanilla, I made strawberry ice cream this weekend. On Saturday a friend and I took a long trek to a strawberry farm to fill up the car with basket upon basket of the delicious gems. This is a yearly ritual and keeps the freezer stocked all year around. Can you imagine, we drove 4 hours there, got 8 big boxes of berries each plus 10 boxes for my parents, and drove 4 hours home. Oh, and we got lost in the Prairies after leaving the farm. It's a maze of farms! Gotta love adventures like that.

Nicole and I planned a beachy day for Sunday. Ice cream sundaes and a long swim were the perfect way to stay cool on the hot sunny day. We topped them with strawberries, cherries, banana, pecans, and my "go to" chocolate sauce.

Here's what my bowl looked like... right before I smothered it in chocolate sauce.

We just love days by the lake! So fortunate to have this. Do you like to swim?

Strawberry Ice Cream
Nut free * Vegan * Raw* Gluten Free

Does it get any easier?! 5 ingredients! Nut free, vegan, and can be raw. Make it raw by using fresh coconut milk- blend coconut water and coconut pulp until smooth and creamy. Must be thick.

1 can coconut milk
2 cups diced strawberries
1/4 cup maple syrup
2 teaspoons lemon juice
1/4 teaspoon xanthan gum

Blend all ingredients until smooth and creamy. Chill the mixture in the fridge for at least 6 hours.
Process in an ice cream machine according to manufacturers instructions.
Will be soft serve at this point. Eat this way or transfer to a freezer for 1-2 hours.

Who can resist refreshing healthy ice cream on a hot summer day?


J and I got out on the jet ski later that day. Always fun to fly along the lake.

Looks incredible! I scream for ice cream..especially strawberry :) that's a worthwhile trip you girls took..sounds fun! I confess to eating dessert sometimes for dinner too btw teehee..why not, right?!

how many grams is 1 can coconut milk? can i use agar agar instead of xanthan gum? will it be same amount?

Nukhet - A can of coconut milk is 398ml. Im not sure that agar could replace the xanthan. If you are to try agar it would be a different amount so you'd have to experiment.

I'm loving the strawberry ice cream. The Tone It Up girls just did a video making strawberry ice cream. I prefer your recipe, although it could be fun to combine the two into a protein-packed vegan one (the Tone It Up one was not vegan).

This looks so yummy! However I only have light coconut milk on hand; do you think I could use that?

Sadie - Full fat coconut milk is best for the creaminess but you can try with the lite. Maybe decrease the amount of strawberries a little so there's less water.
