Pink and white parfaits were on the dessert menu for 'girls movie night' this past week. After a marvelous dinner, and while watching the movie Chocolat, we savored these sweet creamy parfaits. Why weren't we eating chocolate while watching a movie featuring this delicious food?! Simply because I'm making so much chocolate these days for the Easter Special that I needed something fruity! We did, however, enjoy a chocolate truffle each because I figured there HAD to be at least a little something chocolatey.
The large bag of strawberries sitting in my freezer from a nearby farm last summer was the main inspiration for this dessert. June will be rolling around in a few months and I can get heaps more berries so time to eat up! Cans of coconut milk sitting in my pantry (after running out of fresh ones I stocked up on the canned stuff) were my second inspiration, and lastly, a jar of ground cardamom that I left at my mom's house and she brought back to me was my final inspired ingredient for this vegan parfait.

Coconut Cardamom Cream
The coconut cardamom cream is sooo yummy. I'm totally in love with it, lol. I think the combo of coconut cardamom and vanilla were made for each other. I hope you'll give it a try.
2/3 cup coconut milk
1/3 cup water
0.5 oz soaked irish moss
2 tablespoons maple syrup
1/4 cup cashews
7 drops vanilla medicine flower essence
(or vanilla extract, to taste)
6 drops vanilla stevia
3/4 teaspoon ground cardamom
1/4 cup + 3 tablespoons melted coconut oil
Blend the coconut milk, water, and irish moss until smooth. This may take a few minutes. Stop and scrape sides of blender periodically.
Add the remaining ingredients except the coconut oil and blend again until smooth and creamy.
Add the oil and blend again to incorporate.
Chill in the fridge at least 8 hours.
Who doesn't love a simple berry pudding? Try it with raspberries, but blend them first and strain the seeds out.
3 cups chopped strawberries
1 cup coconut milk
1 oz soaked irish moss, chopped
1/4 cup cashews
1/3 cup maple syrup
Few drops stevia
1 tablespoon lemon juice
1 1/2 teaspoons vanilla
1/2 cup melted coconut oil
Blend the coconut milk and irish moss together until smooth.
Add remaining ingredients and blend until smooth.
Finally, add the coconut oil and blend to combine.
Chill for at least 6 hours.
Layer the puddings with fresh strawberries (or any other berry) and/or chopped nuts, shredded coconut, or sprouted buckwheat. Bon apetit!
