Rainy Day Raw Chocolate

Yesterday it was chilly and rainy here... the perfect day to turn my kitchen into my little chocolate factory - something I've missed for a while. In fact, I haven't made choccies in my own kitchie since before heading to Australia mid February.

I made a variety of goodies...

Fruit and Nut Clusters - as simple or exciting as desired depending on which dried fruits and nuts you want to use. I use a basic dark chocolate with goji berries, cashews, almonds, raisins, and dried jakfruit in mine. I made a second tray of these alone!

Mint Moonie Pies. Oh yeah! I love these!! It's been a while since I've had a batch of these around.

Fruit and Nut Cups - With freeze dried strawberries, almonds, mulberries, raisins, and goji berries. In little silicone cups.

Turtle Balls - A take on my caramel pecan turtles. Chewy, crunchy, sweet, and downright decadent!

Centers prepped and ready for dipping into chocolate.

Dipped, with a mini pecan on top :)

Chocolate Covered Strawberry Mini Cheesecake. Because... why not?! I've never tried a chocolate covered cheesecake before, have you? This little gem has a blackberry inside...

... and is garnished with a freeze dried strawberry that I brought all the way back from a strawberry farm in Australia.

Peppermint Patty Cups - dark chocolate with refreshing mint cream.

So that's a taste of what's been going on in my kitchie. Have you made any yummy chocolate treats lately?!

Wow, yummy...No, I haven't had any choc for ages but I do have a batch sitting that I made a while ago. May be time to make some more. Choco covered cheesecake--what a yummy tease...

Are you able to eat more choc now? I've been increasing my carbs and my choc cravings are gone--haven't even been thinking about it.
love

Wow! Everything looks so perfect, so delicious, so decadent. I love all the different creations, lovely garnishes and interesting flavour combinations. I think you should do some workshops (either in Toronto or online). Mostly because I'm missing you!

Lovely chocolates, and nicely shot! Cheesecake idea is great. And all the bits and pieces of leftover melted chocolate can be scraped up after they set, tossed in the food processor with some spices, and remelted with two to three parts water or milk for fantastic sipping chocolate!

Ela - yup, been eating chocolate since February and feel fine with it - although I have to be careful not to get carried away which can happen, lol.

Hey sweetness! It´s a lovley (fingerlicki´n) blog you have here. Something I have been wondering about is how you manage to get your pralines etc coverd in such a thick layer of raw chocolate? I always find it´s to thin or (after a while in the fridge) to thick. Do you have a special trick? Love and bliss!
