Sweet Tooth: Watermelon Strawberry Shake

Yay for the weekend! I don't have another cool ice cream cake to share with you, but it's necessary to balance the rich desserts with lighter ones. Here are two refreshing, watery treats, sure to cool you down in the hot weather (hopefully it's hot where you are - it should be nice here in the coming days).

Watermelon Strawberry Shake

This doesn't require a recipe, but here are some approximates if you want a guideline.
I like the extra kick of the lemon oil, but it's great without it.
For ice pops, freeze the mixture in popsicle molds!

3 cups chopped watermelon
1 cup chopped frozen strawberries
Lime juice, to taste
1-2 drops lemon essential oil, optional

Blend all ingredients together until smooth and frosty.

My oldie comes from last July, 2009... here's what I said in that post... For the first time ever, I've tried lemon balm in a recipe. This tangy refreshing ice cream is packed with the lemony tasting, soft, fuzzy green herb. Lemon balm, part of the mint family, has been used throughout the ages to reduce anxiety, stress, pain, and indigestion. So I say, eat up!

Lemon Balm Berry Ice Cream

1 1/2 cups cashews
1 cup water
1 cup packed lemon balm leaves
1/2 cup blueberries
1/2 cup raspberries
1/2 cup agave
1/3 cup lemon juice
2-3 drops lemon essential oil*

If you'd like little green specs, blend all but the lemon balm until smooth and creamy.
Add the balm and blend briefly. 
Chill and process through an ice cream machine.
*Substitute lemon zest to taste.

Wow, this sounds amazing, I have been gobbling down watermelon like crazy since being pregnant! I will have to make this! And that ice cream, I am growing lemon balm! Perfect!

Lemon Balm has taken over my garden. I have started juicing it along with celery, carrot, kale, parsley, tomato, lemon and whatever else I have in the fridge, but this ice cream sounds much more exciting!

Strawberries and watermelon, what a yummy combination :) Great idea about turning the shake into popsicles. I have a 3 years old and this is a perfect way for him to eat some fruits, stay hydrated and cool on these warm days.

Mmm, too bad there's no tasting through the screen. My three-year-old just saw the pics and said, "Mmm, ice cream!" And, I got to tell him these are good for us too!

I will never forget when you posted this ice-cream last time as the colours just GRABBED me! Oh and I am hearing ya on the strawberry/watermelon mix. I had an awesome similar cocktail out for dinner last week, but this one also had mint in it. I was in LOVE, as am I with your concoction.

That shake sounds incredibly refreshing. I think the addition of lemon and lime brightens fruit desserts and makes the flavours more vibrant - as always your recipes have me scouring my kitchen for ingredients.

Heather you are amazing!

I whipped this up but changed it up a bit and it was yummy too.

Instead of the lemon essential oil and lime, I put in the following:

- 2 T Sheredded Coconut
- 1 T Coconut Oil
- 2-3 Drops of Ginger Extract
- 1 T of Reconstituted Goji Berries

the ice cream sounds amazing! I've made vegan ice cream before with coconut milk but found that it got way to hard/icy after a night in the freezer -- am excited to try making vegan ice cream with cashews!
