Sweet Tooth: Fruity Coconut Parfait


Happy happy Friday guys... and Happy Easter! How will you be celebrating? It's supposed to be hot and sunny here in the NYC area, so I'm certainly looking forward to soaking up some nice weather.

In the name of spring, I've got two super simple treats on the light side for you today! First, a fresh Fruity Coconut Parfait, and from the archives, a Strawberry Shake, from a post in January 2008 entitled Blends of the Day. If you're still hungry for more, check out these other springy dessert ideas from an old post..



Fruity Coconut Parfait
An easy peasy young coconut cream layered with fruit - this is the perfect example of eating dessert for breakfast! I used strawberries and champagne mangos but you can use your favorite fruits.



You will need:

Coconut Cream
Fresh strawberries, diced
Fresh mango, diced

Any other fruit of your choice

Coconut Cream
Ingredients:
1 1/2 cups young coconut pulp
(my pulp was pretty firm)
1/3 cup coconut water
1/4 cup agave
2 Tablespoons agave powder
1 teaspoon pure vanilla extract


Combine all ingredients in a blender until smooth and creamy. 


Strawberry Shake

Hehe, here's a funny little tid-bit I included in that old post... I swear I could live on smoothies, in fact, a few months ago my dad exclaimed, "Your teeth are gonna fall out of your head because you never use your teeth to chew anything. Everything you eat is blended!" Bah...I eat many unblended things, but I usually eat two or more blended things every day. If I were only allowed smoothies or other food for any period of time, I'd go for the smoothies!



Ingredients:


1 cup almond milk 
1 cup frozen chopped strawberries
1/2 medium banana
1/2 tsp maca
1/2 tsp lucuma
2 tsp goji berries
1-2 tsp agave, or to taste


Blend all ingredients until smooth, adding a few ice cubes.

Oh Heathy the food just looks awesome! I missed your wrap post til now..and the other day i did wraps, too, but yours trump mine, for sure! And the ginger carrot pate in the nori rolls...holy yum! Normally i always go sweets over savory, but your savory is making me hungrier than the glorious sweet creations on this post.

Hey sweetie. Sorry I couldn't get over here sooner. Those blended desserts are my favorite at the moment. Hayden thinks they are for her. She's not ready for these, but we are experimenting with solids. She loves bananas and pears, like her mama :-)

I'm going to give her mango soon. You're right about the champagne kind. They're the best!

That smoothie looks great! I'd put strawberries and maybe GRAPES in the parfait! :)
