Moonie Pie Challenge Update... Entries Thus Far


The race is on... The Moonie Pie Contest is in full swing now and I've got an exciting update to share! There's only one more week left to get your moonies made and your submissions in to me. Saturday April 17 is the deadline. The winner will be announced on Sunday or Monday on my blog. 


A Little Reminder To...

-Blog about your creation with mention of your 2 ingredient changes, and post a picture, then let me know. If you don't have a blog you can face book it, or email me directly with your photo/recipe. 


-Be sure to have an extra moonie on hand, ready to send my way if you're the winner! ;) I will have all three of mine ready to send to you (I know I know, it's tempting not to eat them ALL).


-Check your email Sunday morning, as I will email the winner to arrange for the moonie exchange!



An Update
I've been in touch with a number of people who are getting creative in their kitchie - some folks are even perfecting their filling before making the rest of the cake. Yowsa, we've got some chefs in town, I love it! In my perfect world we'd all get together to share our moonie creations!
Here are some of the folks who have blogged about their amazing looking moonie pies (in no particular order). I am super impressed and want to sample them all.


Nina made tropical moonies! Guava-Raspberry, Pistachio Rose, Tiramisu, and Custard Apple

Bitt made tropical DURIAN moonies!!! 



...Chocolate Chai...

Jamiee made her moonies with local honey and yacon!


Raw Candy made Strawberry Moonies - beautiful!

Gina made an Almond Butter Coconut Moonie... yum yum!

Marie-Lies made the banana and vanilla moonie pies in 3 different shapes! She added hazelnut/brazil nut to the cake. 

Laurel has come up with an Orange Dream Moonie! She even made a video of her family members trying the pie. Totally cool!


Nelly made Milk Chocolate Moonies! She enjoyed these for her Birthday - Sweet cheers to the beginning of a new year girl!

Laurel G has created THREE different variations! Woo!!! Raspberry, Mango, and Lemon Creme... she has a few other ideas up her sleeve too, she told me... plus...

Strawberry Banana... she had fun! :)

Debbie has created TWO versions... Superfood Moonies

...and Chocolate Moonie Bites

Oh my goodness, all of those look sooooooooooooooooooooo good... I need chocolate now... raw, of course! :) (the only way to have chocolate!)

I am so impressed! I love eating raw desserts, but I am not good at making them! :) I was never good at baking either! I guess desserts are meant to be made for me!

Do you think Stevia powder is a good alternative to Agave Powder? Or perhaps even Yacon root powder - they are the only alternatives I can see.

Well I guess I can try them and see what happens, if you dont try you dont know.

On topic: Those moonie pies look amazing, all of them!

Mel, Noooo! Don't do it!!!!
The agave powder doesn't act as a sweetener in the recipe, but more of a thickener/binder/adds creaminess.
I recommend experimenting with using a little more lecithin and coconut oil. The recipe doesn't actually need more sweetener. ;)

Hehe, I concider myself warned. I have soya lecithin and psyllium husks - do they both do the same job?

I havent tried making them yet as my order of cocao butter hasnt arrived, so its a good job I know now. :)

Use the lecithin -the psyllium will make it too gummy.
