I've always been a fan of tropical fruit, in fact, a lot of the time I center my vacations around the beach, heat, and fruit. Three years ago while in Fiji and Australia, I had the most amazing pleasure of indulging in fresh jack fruit. I would often treat myself to a morning at the beach with a breakfast of jack fruit from the Byron Bay farmers market. Two words to describe it - juicy heaven. It is said that jackfruit is the inspiration behind juicy fruit gum, so that might gives you an idea of the taste (I loved it growing up). Here's a bunch of amazing fruit that I picked and ate in Australia. You can see the big jack fruit on the bottom left... also pictured (in random order) are sapotes, avocados, atemoyas, cherimoyas (another of my fave fruits), star fruit, baby bananas, tamarillos, persimmons, mandarin oranges, kiwi, paw paw (like papaya), and ice cream beans (which are totally amazing - like little "melt in your mouth" cotton balls).
Jack fruit is the largest tree borne fruit in the world, and can weight up to 100 lbs each! I was in awe of them hanging off the trees in Fiji like decorations (very heavy ones!). The fruit contains heaps of bright yellowy/orange chewy, sweet, pulp covered seeds - Some fruits had firmer pods, while others were softer - I prefer the firm ones.

A unique property of the fruit is it's extremely sticky sap which is used as an adhesive! Despite knowing this, I accidently got some on me one day... let me say, it's damn annoying because nothing gets it off! I tried coconut oil, olive oil, soap.... nope... just had to wait a few days as I kept trying to scrape it off my skin with my finger nails.
This past Christmas my amazing friend Courtney (Radical Radiance) sent me 2 bags of dried jackfruit from Viva Pura - the only raw food store I've seen who carries the dried fruit. I was seeeriously excited! She knows me well and said I'd like it dipped in dark chocolate. I tried it - oh man, even MORE heavenly!
I also soaked some for use in a pudding. Soaking it reminds me of eating the fresh stuff... ah, again one day... anyway, my pudding was a mixture of:
Soaked jackfruit
Water
Strawberries
Young coconut pulp
Goji berries
Banana
I couldn't resist making jackfruit ice cream! I served this up for dessert last evening when a friend was over for dinner - I told her about the juicy fruit gum connection and she was like "omg yeah, it totally does taste like that!" I topped it with cacao nibs, macadamias, and placed the scoops on top of chopped bananas. I would like to make it again with the addition of mango.
Jackfruit Ice Cream
1/2 cup packed, dried jackfruit
Soaked in 1 3/4 cups water
1 1/2 cups cashews
1 medium orange, peeled and seeded
1/3 cup agave
2 tsp lemon juice
Turmeric, for colour
Allow the jackfruit to soak for 6 hours, or as long as 12 hours.
Blend all ingredients until smooth and creamy.
Chill for a few hours in the fridge.
Process through an ice cream maker according to manufacturers instructions.
Have you tried jack fruit, or any other really cool tropical fruits?

xoxo!
I have not tried jackfruit, but after reading this post, I sure do want to!!! Thanks for telling us about it, and sharing your yummy looking recipes:)
I had my first cherimoya, durian and persimmon this past year, and loved them all:)
The ice cream looks and sounds amazing! I've never had jackfruit, but I had heard before that it was the inspiration for the juicy fruit gum, which I also used to love.
A friend of mine is from Mexico and she got some dragon fruit for desert one time we had lunch together... it was awesome!
I absolutely love fresh jackfruit. I recently bought a few packs of the freeze-dried kind, but the fresh one is just *so good*. It's tangy and sweet and I can't get enough of it. :)
This winter (when I was in the Philippines) I peeled half a jackfruit myself (and man those things are huge). Ergo, I was more than slathered in the sticky sap. My mom gave me something (some sort of oil..coconut oil? I'm not sure I'll ask her) after laughing at me and *remaining silent* as I struggled and soaped and resoaped my sticky paws over and over again before fessin' up to knowing the *cure*.
Anyway whatever it was got the stuff *right off*. I'll tell you if I find out :)
I've never had jackfruit either although, I think here we can get some frozen. Sounds delicious! Looks similar to durian, I just hope it's not stinky like it. :) And I'm curious about the ice cream beans.
I totally want to try this fruit now!
I miss it sooo much and enjoyed this post. The ice cream with Mr Jack is certainly THE exotic ice cream ;-]

i love jackfruit!!!! kinda scary to harvest though cuz their so big i dont usually have a ladder just try to knock them down with rock or empty coconuts... yeah i know i must look riduculous to passerbyers but hey they are da bomb!!! i like it when people share!!!
Heather! I love your creative ice cream recipes! Excellent work. I just borrowed an ice cream maker and was hoping to try out a recipe this weekend for Valentines Day - any suggestions for flavors?! :-)
also, I've never had jackfruit or durian for that matter. I need to get on the tropical fruit bandwagon!!
Ive never even heard of jackfruit before but you have got me curious! Your ice cream looks delicious :)
Ok, looks like most people in North America haven't had the jackfruit experience yet... i urge you to give it a try as soon as possible :) Never even seen it at the Asian markets over here which is a bummer...
Serena - freeze dried sounds good too!
Marlie girl... I'll msg you the links to some of my ice cream recipes... so excited that you got a maker!
I am intrigued!! I have never had Jackfruit! I wouldn't even know where to find it around here! Looks so yummy the way you made it! Mmm!
I've never heard of it before!! Sounds fantastic!
I ate a TON of jackfruit in Thailand, for the first time, and 100% agree that it is awesome. I would sit with the thais while they broke into it and sorted the fruit pockets out. It's HUGE! Jackfruit and Pomelo and Dragonfruit were definitely my "new faves" there, just plain. Durian was still bad (sorry) and grapefruit and others were still incredible; some things don't change........
I had Black Sapote at the Byron Bay Farmer's Market...I fell in love! I know they can grow here in Hawaii but I can never find them....I'm on a mission!!
Aloha:-)
PS I'm dying to try the Ice Cream Beans!
So honored you came by and checked out Yoga Addicted, have been following you for years :)
In St.Thomas I loved having a Papaya tree in my yard as well as a coconut, cashew and noni trees. On the North side of the Island people put out boxes of mangos for people to take because they have so many! YUM...
New Award for you :)

Is the soakingwater also going into the mixture?
You say you want to add mango, would that be instead of the orange?
Have a lovely day.
had to look up this old post because I found a great local (for me) supplier of organic dried jak fruit. Tierra Farm. www.tierrafarm.com
They also have great prices for organic nuts and other dried fruits, even raw almond butter.
I can't wait to make your jak fruit ice cream! I'll have to get on that before my daughter eats it all!
