A Catch Up... with Something Sweet & Savory

This is a bit of a random post of old stuff from the holidays... but what the hell, better late than never...

Around Christmas, my best friend Lauren (we've been friends for 21 years, if you can imagine) and I had a kitchie playdate- she is terribly allergic to nuts, so hasn't been able to try much of my raw food over the years. I came up with a nut free menu for us - Cucumber Cilantro Soup, Zucchini Hummus with veggies, and Chocolate with dried fruit/coconut. What a feast we had! She loved the soupie - I like to make it with dill, but she especially loves cilantro.

Cucumber Cilantro Soup

2 cups chopped cucumber
1 stalk celery
1/2 avocado
1/2 cup cilantro
1 1/2 cups hot water
1 Tbs lemon juice
2 tsp honey
2 tsp apple cider vinegar
1 clove garlic
Himalayan salt, to taste

Blend all ingredients until smooth. Adjust seasonings.

Kale salad - A mix of massaged kale, yellow & red peppers, tomato, chili sunflower seeds, lemon juice, avocado, chipotle, and sea salt.

Delish! Zucchini Alfredo one evening - the noodles went on for ever and ever!
Adam and I made this pizza for dinner last week using the leftover crusts from the dinner party. Topped with buckwheat "refried" beans, marinated portobello mushies, tomato, seed cheese, and cilantro.
We had a bon fire one cold winter's night at my parent's house with a group of people.

Choccie pudding for dessert one evening, topped with my sweet coconut nuts.
Super Cacao Pudding
1 medium avocado
1/2 cup water
1/4 cup agave
1/3 cup pitted dates
1/4 cup cacao powder
2 tsp lucuma
1 tsp maca
1 teaspoon pure vanilla extract
2 pinches sea salt

Blend all ingredients until smooth and creamy in either a blender or food processor.

you sure are brave to head out into the snow for a bonfire...brrrr!

Vegan Lisa - that is so funny - my mom loves turning on the fireplace channel even though we have a woodstove! LOL The pic of the fire is actually the outdoor bon fire we had - it was sooo cold that night!

Bitt - OMG we had to bundle up big time that night cuz it was freezing!

Fitness - the cheese (cream) is made with a sunflower seed/cashew base, plus nutritional yeast, lemon juice, garlic, and himalayan salt

What a great soup recipe Heathy! Thank you so much for sharing. I love cucumbers and cilantro together. I can't wait to try it. Your blog has been such an inspiration for me on my raw food journey. I love to look at all of your delightful creations. I just finished eating a salad with your Cesar dressing. I love that stuff!

Sorry to hear your friend is allergic to nuts. My poor sister is allergic to some nuts, as well as almost all raw produce.

I made that cucumber cilantro soup tonight... SO GOOD! I did use an entire avocado instead of 1/2 though, because the avos I had were really small. mmmmmmmm nom nom so delish!

I just made the cacao pudding and really - this is the best cacao pudding EVER! I know I will make it many, many more times. So amazing that something this decadent can be healthy! Thank you!
