Last Saturday afternoon I invited over a bunch of people to sample gourmet raw food, watch and taste a banana ice cream demo, get answers to "why raw", and hear about my new services - including classes, and a weekly delivery service.
One of the best parts for me was all the food prep involved. Here are the items I served - for some things I only have an ingredient list because I dont usually measure.
Raw pizza on carrot pulp/nut crust and sprouted buckwheat crust, both topped with sundried tomato sauce, red/green peppers, red onion, parsley, and seed cheese.

Veggie Herb Pizza Crust
By Erica of School or Rawk
2 cups Sprouted buckwheat
2 zucchinis (2 cups)
onion powder
1-2 cloves garlic
Braggs (or salt for those who don't do Braggs)
1 1/2 teaspoon herbs de provence
1/2 - 3/4 cup ground flax
1 tablespoon oil
Process until a dough-like consistency is reached. Add more or less flax, as needed.Form into pizza crusts and dehydrate.
Sundried Tomato Basil Mushroom Caps
Lots of mushrooms with stems removed
5 cups fresh basil leaves
2 cups walnuts
2/3 cup sundried tomatoes, hydrated
3 tbs olive oil
3-4 cloves garlic
1 1/4 tsp sea salt
Whiz pesto ingredients together in a food processor.
Spoon into mushroom caps and dehydrate at 115F for 5-6 hours.
These are my all time favourite appetizer!
Seed Cheese Topped Celery

Soaked sunflower seeds
lemon juice
nama shoyu
garlic
sea salt
bit of water
Blended together until completely smooth and creamy. This firms up slightly in the fridge. Spread on celery and forget there ever was cheez wiz!
Cinnamon Raisin Cookies

pecans
almonds
cinnamon
dates
sea salt
raisins
Mix all but raisins together in a food processor. Gently mix in raisins. Form into round cookies, dehydrate 6-8 hours at 115F.
Blueberry Mango Tarts

Crust:
pecans, walnuts, raisins, sea salt
Filling:
frozen wild blueberries, mango, cashews, agave, lemon juice
Brownie Bites

2 cups walnuts
1.5 cups pitted medjool dates
1/2 cup carob powder
Mix all in food processor to combine. Press into a 9" pan. Chill.
Zucchini Bread and Almond Coconut Balls

The zucchini bread was Gabriel Cousens recipe:
zucchini, pecans, raisins, cinnamon, sea salt, and flax seeds.
Coconut almond balls:
almonds
dates
raisins
shredded coconut
pure almond extract
sea salt
Flax Crackers
Blend: soaked sundried tomatoes, fresh tomatoes, parsley, lemon juice, garlic, onion, sea salt
Mix with: whole flax seeds and water
Spread thin and dehydrate 24 hours at 110F, flipping onto the mesh sheet after 6-8 hours.
Salsa
tomatoes, green and red pepper, cilantro, red onion, lemon juice, sea salt
So it was a fun afternoon and I think people got a pleasant surprise about what raw food is!
