My raw food class!

Tonite was my first public raw food class. Ive done little ones in the past for friends and stuff, but this time was the real deal! lol
It was a complete success, im very happy and proud to say! Everyone enjoyed the food, asked lots of questions and seemed very interested in these new possibilities.

Me teaching...
I really thought i was going to be totally nervous and do "bad", but i felt completely comfortable up there once i got going. Afterall, im very comfortable with food, and i like to tell people about a raw food diet if they are open to hearing about it.
I mentioned that i will be teaching a series of classes in the summer and a bunch of people were interested and wrote down their email to be informed.


Here's what I made in the class:

Zucchini Pasta with Marinara Sauce

2 small zucchinis

1.5 cups tomatoes
2 cups sun dried tomatoes, soaked a few hours
2-4 Tbsp olive oil
2 cloves garlic
¼ cup basil leaves
1-2 dates or 2 tsp agave
1 tsp sea salt

Peel and slice zucchini into long strips (noodles) using a spiroli slicer, or mandoline.
Blend the remaining ingredients together until smooth. Serve with zucchini noodles.

Brownie Balls

1 cup walnuts, soaked
1 cup dates, pitted
¼ cup carob powder

Process all ingredients in a food processor until it comes together into a dough. Roll into balls. Optional: roll into shredded coconut or extra carob powder. Chill in the freezer.

Note: To make brownies, double the recipe and press into the bottom of an 8” or 9” pan instead of rolling into balls.

Banana ice cream

Peel 3 or more bananas. Freeze and then puree in a food processor or high speed blender until creamy and smooth.

Ice Cream Sundae

Carob sauce:
¼ cup carob powder
5 dates, soaked OR 4 Tbsp raw honey
water as needed for blending

Blend together until smooth. Add water slowly so that it because sauce-like.
Top bananas with berries, chopped nuts, and carob sauce.

Tonite my corn chips FINALLY finished dehydrating! Yippeeee...after 24 hours! And it was the first time, with no recipe so i was hoping they would turn out. Drum roll please....OMG they are sooo damn good!!!! I can only imagine what they are gonna be like with the salsa and guacamole!



The only problem is that i didnt want to make a HUGE batch since it was the first time. But now I think I need more since there will be 15 ppl for the dinner. But its also hard to guage how much each person will eat.

Since I am about 85% raw and loving it, I am so hyped about teaching classes. When I travel I'm usually in someones kitchen making raw goodies and meals and everyone loves it.
I wanted to know what you charge and how you market yourself. I live in Idaho.
